WHAT WE'RE DRINKING DURING BRIX RUM MONTH


August is Rum Month.


Every year, National Rum Day falls on 16th August. In the spirit of putting Australian Rum in the limelight, we're celebrating our favourite spirit all August long.


There are many reasons we love Rum, but high up on that list is how fun and versatile a spirit it is. Unlike whisky, which is frequently associated with more somber, contemplative settings, Rum exudes a sense of liveliness, adventure and festivity. Its wide variety of flavours, from light and fruity to dark and spiced, make it more accessible and versatile for creating colourful, refreshing cocktails. Whether for social gatherings or simply enjoying a delicious dram when the mood strikes, these are the drinks we're whipping up to celebrate all things Rum Month.


PASSIONFRUIT DAIQUIRI

For a magnificent tiki twist on a classic Cane Spirit cocktail, we give you the Passionfruit Daiquiri. This cocktail greets you with a burst of tropical passionfruit aroma, followed by the tangy brightness of lime and the smooth, mellow sweetness of Cane Spirit enriched by the complex layers of green apple, fennel & caramelised figs.


A Brix Ginger Beer Rum Sour with a lemon garnish

INGREDIENTS 

45ML BRIX CANE SPIRIT

15ML PASSIONFRUIT LIQUEUR

30ML LIME JUICE

10ML SIMPLE SYRUP

LIME WHEEL TO GARNISH

METHOD

1) Add Brix Cane Spirit and all other ingredients to a cocktail shaker with ice 

2) Shake hard until the shaker becomes ice cold 

3) Strain into a Nick & Nora glass

4) Garnish with a dehydrated lime wheel




SALTED CARAMEL OLD FASHIONED 

A luxuriously indulgent twist on the classic Old Fashioned. This cocktail combines the rich, smooth notes of Brix Australian Rum with the decadent flavors of salted caramel. On the palate, this cocktail begins with the smooth, buttery sweetness of salted caramel, perfectly balanced by the deep, robust notes of Brix Australian Rum. The Rum’s complex profile reveals layers of vanilla, toffee, and a hint of oak, which meld seamlessly with the caramel. The finish is long and luxurious, with the warmth of the Rum lingering on the palate, accompanied by a delicate saltiness and a gentle citrus freshness from the dash of orange bitters. The interplay of sweet, salty, and bitter flavors leaves a delightfully balanced aftertaste that invites you to savour every sip.


Brix Australian Mango Rum Old Fashioned with a big block of ice

INGREDIENTS

60ML BRIX AUSTRALIAN RUM

10ML SALTED CARAMEL SYRUP

1 DASH ORANGE BITTERS

2 DASHES ANGOSTURA BITTERS

4 DROPS CHOCOLATE BITTERS

CARAMEL POPCORN TO GARNISH

METHOD

1) Add all other ingredients

to a mixing glass & add ice​

2) Stir for 30 seconds to desired dilution, tasting as you  go 

3) Strain into a rocks glass over a large block of ice

4) Garnish with a caramel popcorn skewer and salted caramel drizzle




MANGO RUM & ELDERFLOWER DAIQUIRI

This juicy number opens with the vibrant aroma of ripe mango, underscored by the subtle floral notes of elderflower. The initial taste is a delightful blend of sweet mango merged with the smooth, refined character of Brix Mango Rum and balanced by the tangy brightness of lime. The elderflower adds a delicate, aromatic finish, making this cocktail both refreshing and an elevated fruit-forward twist on the classic Daiquiri.

INGREDIENTS

45ML BRIX MANGO RUM

20ML ELDERFLOWER LIQUEUR

20ML LIME JUIE

15ML SUGAR SYRUP

EDIBLE FLOWERS TO GARNISH

METHOD

1) Add all ingredients to a cocktail shaker with ice 

2) Shake hard until the shaker becomes ice cold 

3) Double strain into a Nick & Nora glass 

4) Garnish with edible flower petals





SPICED RUM NEGRONI

The Spiced Rum Negroni is a captivating twist on the classic Negroni, substituting gin with the warm, aromatic notes of Brix Spiced Rum. This cocktail combines the complexity of traditional Italian aperitifs with the bold, spiced character of Brix Spiced Rum, resulting in a drink that is both intriguing and deeply satisfying.

INGREDIENTS

20ML BRIX SPICED RUM

20ML ROSSO VERMOUTH

20ML CAMPARI

ORANGE TWIST & ORANGE SLICE

METHOD

1) Add all ingredients to a mixing glass & fill with ice 

2) Stir for 30 seconds until desired dilution, tasting as you stir 

3) Strain into a rocks glass over a large block of ice 

4) Twist orange peel over the drink & garnish with a fresh orange slice




CANE SPIRIT MOJITO

A refreshing Mojito is a must-have for Rum Month. The first impression is a burst of fresh mint, complemented by the zesty brightness of lime. Brix Cane Spirit adds a smooth, slightly sweet undertone that enhances the overall profile without overpowering the fresh ingredients. The finish is clean and crisp, with the effervescence of the soda water providing a refreshing lift. An easy to create crowd pleaser that will steal the limelight on any occasion.

INGREDIENTS

45ML BRIX CANE SPIRIT

30ML SIMPLE SYRUP

6-8 MINT LEAVES

1/2 OF A LIME - CUT INTO WEDGES

SODA WATER & MINT SPRIG

METHOD

1) Add lime & simple syrup to a tall glass & muddle ​

2) Add mint leaves, Brix Cane Spirit & ice​

3) Churn with a spoon until flavours have combined 

4) Add more ice until full & top with soda water​

5) Garnish with a mint sprig & a lime wheel




PEACH FLOCK

Created by Melbourne-based bartender Alessandro Nardini of Bar Crafts, the Peach Flock reinvents the tiki classic, the Jungle Bird. With lacto-fermented peaches and a gentle bitterness from the cocoa husk Campari, the Peach Flock brings an elevated elegance by merging technique with bursts of beautiful flavor. Expect ripe peach, underpinned by the zesty freshness of lime, enriched by the bittersweet complexity of Cocoa Husk Campari and complimented by the deep, rich stone fruit notes of the Australian Rum. This cocktail offers a sophisticated drinking experience that makes the technical steps all worth your while.

45ML BRIX AUSTRALIAN RUM

15ML COCOA HUSK CAMPARI

45ML LACTO-FERMENTED PEACH

15ML FRESH LIME JUICE

15ML SIMPLE SYRUP

METHOD

1) Add all ingredients to a cocktail shaker & fill with ice 

2) Shake hard until the shaker becomes ice cold 

3) Strain into a Rocks glass over a large block of ice 

4) Garnish with a charred peach slice





GINGER RUM SOUR

This cocktail offers a perfect balance of tangy and sweet, providing a refreshing twist on the traditional sour. The robust character of Select Cask #004 Ginger Beer Finish pairs beautifully with the zesty kick of fresh lemon juice.


INGREDIENTS

60ML BRIX SELECT CASK #004

GINGER BEER FINISH

30ML LEMON JUICE

20ML SUGAR SYRUP

15ML EGG WHITE​

MARASCHINO CHERRY TO GARNISH

METHOD

1) Add all ingredients to a cocktail shaker & dry-shake for 30 seconds without ice ​

2) Add ice and shake again until the shaker becomes ice cold 

3) Strain into a Rocks glass over a large block of ice​

4) Garnish with a maraschino cherry





BRIXENHURST

The Brixenhurst is an inventive take on the classic Bensonhurst cocktail, reinvented with the distinctive character of Brix Australian Rum. This cocktail offers a unique blend of rich, smooth Rum flavors with the complexity of Italian bitters and the herbal notes of vermouth. The result is a refined and complex drink that pays homage to its origins while introducing a distinctly Australian twist.


INGREDIENTS 

45ML BRIX AUSTRALIAN RUM

30ML DRY VERMOUTH

5ML CYNAR

10ML MARASCHINO 

LIME TWIST TO GARNISH

METHOD

1) Add 45ml Brix Australian Rum plus all other ingredients to a mixing glass​

2) Stir for 30 seconds to desired dilution, tasting as you  go 

3) Strain into a RIEDEL Nick & Nora glass ​

4) Garnish with a lemon twist

We'll conclude the experience back at Brix for a distillery tour and final tasting.

This evening will showcase exceptional Brix cocktails crafted by legends of the hospitality industry and featured at some of Sydney's finest bars and restaurants including Armorica, Dulcie's Green Moustache & Teddy's.
