Brixmas Pudding
In collaboration with Newcastle locals Adamstown Pudding Kitchen we have reinvented the classic Christmas Pudding with a Brix Spiced Rum twist.
Adamstown Pudding Kitchen have been operating since 1971 as a not for profit organisation, supporting a range of welfare & community programs in the Newcastle region. A great pudding from a fantastic organisation!
We have only produced a small number of these delicious puddings, so be quick to grab yours for Brixmas.
Each pudding serves 10 people.
To Serve: Remove packaging and wrap pudding tightly in clingfilm. Gently simmer covered for 45 minutes. Remove from water and allow to cool slightly. Remove clingfilm and place on serving platter. Warm Brix Spiced Rum in a small saucepan. DO NOT BOIL. Very carefully hold the saucepan over the pudding, light the rum and gently pour over the pudding. Allow the flame to dissipate before serving. Serve with ice cream or custard and a glass of Brix Spiced Rum.
